Pancake Mix

  • 1 cup almond flour
  • 2 tablespoons The Roasted Purpose Gourmet Protein Powder (unflavored)
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup almond milk (or any dairy-free milk of your choice) 
  • Monk fruit sweetener to taste (start with 1-2 tablespoons and adjust according to your sweetness preference)
  • 1 teaspoon vanilla extract
  • Coconut oil or dairy-free cooking spray for frying
  • Topping Strawberry Sauce - Cooked Frozen Strawberries 
  • Non Dairy Reddi Wip - Coconut whipped cream

Instructions:

  • Whisk the Dry Ingredients: In a mixing bowl, whisk together the almond flour, collagen protein powder, coconut flour, baking powder, and salt until well combined.
  • Mix the Wet Ingredients: In another bowl, beat the eggs, almond milk, monk fruit sweetener, and vanilla extract until well mixed. Start with 1-2 tablespoons of monk fruit sweetener and adjust to your desired level of sweetness.
  • Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until you have a smooth pancake batter. Allow it to sit for a few minutes to let the coconut flour absorb some of the liquid. Adjust the consistency with a bit more almond milk if needed.
  • Heat and Grease: Heat a non-stick skillet or griddle over medium heat and lightly grease it with coconut oil or cooking spray.
  • Cook the Pancakes: Ladle a portion of the pancake batter onto the hot surface and use the back of the ladle to spread it into a round shape. Cook for about 2-3 minutes on the first side until bubbles form on the edges.
  • Flip and Cook: Carefully flip the pancake with a spatula and cook for an additional 2-3 minutes on the other side, or until it's golden brown and cooked through.
  • Repeat and Keep Warm: Remove the pancake from the skillet and keep it warm. Repeat the process with the remaining batter, adding more coconut oil or cooking spray as needed.

Strawberry Syrup

Ingredients:

  • 2 cups frozen strawberries

Instructions:

  • Simmer: In a saucepan, add the frozen strawberries. Place the saucepan over medium heat and bring the strawberries to a gentle simmer. Stir occasionally as the strawberries release their juices and simmer.
  • Cook: Allow the strawberries to simmer for about 7-10 minutes or until they have softened and the mixture has thickened slightly. You'll notice the strawberries turning bright red as they cook.
  • Mash or Blend (Optional): If you prefer a chunky syrup, you can use a potato masher or a fork to lightly mash the strawberries right in the saucepan. For a smoother consistency, transfer the mixture to a blender or use an immersion blender to puree the strawberries until you reach your desired texture.
  • Cool: Allow the strawberry syrup to cool to room temperature. It will thicken further as it cools.
  • Store: Transfer the cooled strawberry syrup to a clean, airtight container or a glass jar with a lid. You can store it in the refrigerator for up to a week.
